CSA Week 6

CSA--Week 6


This week's share included a large box of blueberries, green beans, potatoes, a green bell pepper, eggplant, onion, carrots, more squash, a cucumber, and more peaches!

The blueberries and peaches are in the freezer waiting to be made into jam (we are going to have a fabulous jam day here sometime soon). The eggplant went to our friend. Some of the carrots and squash we sauteed and put over pasta for dinner. Today we are going to make veggie soup as we are getting a bit overrun with vegetables that we can't quite use fast enough. So potatoes, carrots, and beets will cook first to create a creamy base, then we'll add the other veggies later so they aren't mushy--green beans, onion, bell pepper, squash, zucchini....whatever sounds good. We're totally winging it here. We'll use our homemade veggie stock as the base and make some sort of carb to go with. ^_^

I still have the monster veggies from our friend. I think the zucchini will be grated and frozen for future zucchini breads. The squash's fate is yet to be determined.

  1. Sooo...I notice that eggplants keep disappearing off "to a friend". Don't like them? Too much of a pain to cook with? I hear they make a good veggie lasagna, but I've never made it. And do you pick up your share or have it delivered? Curiosity and all that. =)

    1. We find eggplant to be...gross. Maybe it's in the cooking, but the texture of it squicks me out completely. I've also heard they are outstanding in veggie lasagna but never been willing to waste all the other ingredients if we don't like it. : /

      We pick up our share. Our farm delivers to probably 20+ locations, so we picked the one closest to the house and the hubby and I alternate weeks. The pickup window is short (only 45 minutes) so it can be a hassle sometimes, but it is totally worth it.

    2. Good to know. I've never heard anything about the texture, but I also have been unwilling to waste a bunch of ingredients on the lasagna trying it out.

  2. 1 <3 eggplant. Eggplant fries are the best! Last year I grated a bunch of zucchini, froze it in muffin tins (which works great) and have been pulling it out for bread and ... brownies. Seriously. Just google zucchini brownies - it works wonderfully!
