Spinach Dip

Spinach Dip

Catching up on recipe posts again (or trying to!). We made this for our Anti-Superbowl Party way back in February using this recipe as the inspiration.

Makes: A 6"x6" dish

1 (10 ounce) package frozen chopped spinach
1 cup sour cream
1 cup light mayonnaise
3/4 cup chopped green onions
2 tsp dried parsley
1 tsp lemon juice
1/2 tsp salt

COMBINE all ingredients
MIX until well blended
CHILL until serving

My Thoughts
1. This was a tasty, creamy dip that went well with french bread (yum), but you could also serve with crackers.

2. The recipe said to thaw the spinach first, we added ours still frozen and everything worked out fine. If you opt to do that, just make sure it will have enough time to chill so that your guests don't get frozen chunks.
