Summer Salsa

Mango Radish Salsa


After discovering that our turnips were really radishes (oops), I went looking for good radish recipes. And stumbled upon mango radish salsa. Upon seeing that I couldn't resist. I like sweet salsas and I love mango, we were off to the races.

Makes: 4-6 servings

Ingredients
~3 cups diced mango, (I used two)
1/4 cup chopped green onions
~1 cup diced radishes
1 tablespoon lime juice
1/4 teaspoon salt


Directions
DICE the mango, onion and radish
PLACE in a medium bowl
ADD lime juice and salt
STIR

LET CHILL for 20 minutes

Enjoy!

My Thoughts
1. The sweet mango and peppery radish was a nice balance--especially with salty tortilla chips--but I think I will save this for parties and things where there are lots of people to help me eat it--it's not something I want to eat gallons of.

2. We used our pink lady CSA radishes which are pink cylinders rather than your standard red spheres. The pink ladies are a bit more mild, but I think regular radishes would be fine.

3. I peeled our radishes, mostly because I still thought they were turnips and was going to boil and mash them. (The peppery scent cued me in). You certainly don't need to, just wash well before dicing. : )
