Cucumber and Tomato Salad


Cucumber and Tomato Salad


When I was a kid my mom used to make a tomato salad (sometimes with cucumbers). I loved that stuff and so when we ended up with ample amounts of cucumbers and tomatoes through our CSA I knew just what to make. Only when I asked her for the recipe, it turned out there really wasn't one, so I just went off what I remembered and what tasted good.

Makes: 4-6 servings

Ingredients
1/2 large cucumber
1 beefsteak tomato
1 slice medium white onion
5 tsp rice vinegar
1/4 tsp salt
1/4 tsp minced garlic

Directions
CHOP cucumber, tomato, and onion into small pieces

MIX vinegar, salt, and garlic in a bowl
ADD vegetables
TOSS with vinegar mix

COVER with plastic wrap
LET CHILL in the fridge for at least 30 minutes to allow flavors to mix

My Thoughts
1. This salad turned out just how I remembered it. : )

2. My mother now thinks that the original recipe she had (which included balsamic vinegar, apparently) was actually for a bruschetta. With balsamic instead of rice vinegar and a bit of parsley, you could easily serve this on some crusty bread.

    Isn't it funny that the dishes we remember the most from childhood have no recipes? My grandmother recently died, and I brought her recipe box back home with me. Turns out to have nothing in it that I remember eating. All the family favorites were in her head.
