Red Berry Pie Filling


Pocket Pies


As part of our Pi Day celebrations, the hubby and I decided to bake a sweet Red Berry pie, using the filling recipe found at Willow Bird Baking.

Ingredients
3 cups raspberries
3 cups strawberries
1 Granny Smith apple
2 tsp lemon juice
3/4 cup sugar
2 1/2 tbsp flour
1/4 tsp table salt

Directions
PLACE 2 cups strawberries and 1 cup raspberries in medium saucepan over medium heat.
COOK, stirring frequently for 12-15 minutes.
MASH berries.

PEEL and GRATE the granny smith apple.
PLACE in clean kitchen towel.
WRING dry.

TRANSFER apple to large bowl.
ADD cooked berries, remaining berries, lemon juice, sugar, flour, and salt.
TOSS to combine.

My Thoughts
1. Willow Bird's sleuthing really paid off! The granny smith apple and a bit of thickener (we used flour) serve to make this filling deliciously firm instead of a soggy mess. The apple disappears into the filling so you don't even notice it as you eat.

2. The combination of raspberries and strawberries makes this a slightly tart pie, if you prefer super sweet, simply use 6 cups of strawberries. (Two of those small plastic containers.)
