I found these enchanting little appetizers over at One Ordinary Day and just knew that we had to make them. My hubby loves pizza, but it's not something we typically make at home. These looked like an easy way to get the same flavors and deliciousness without actually, you know, making a pizza.
Yield: 15 puffs
Ingredients
3/4 cup flour
3/4 teaspoon baking powder
1 tablespoon Italian seasoning
pinch of kosher salt
1 egg
3/4 cup milk
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 cup cubed pepperoni
Directions
PREHEAT the oven to 375F
GREASE a mini muffin pan
WHISK flour, baking powder, Italian seasoning, and salt together in a large bowl
LIGHTLY BEAT egg in a small bowl
WHISK egg and milk into flour mixture
STIR in mozzarella, Parmesan, and pepperoni
LET STAND for 10 minutes
STIR batter
DIVIDE into mini-muffin cups
BAKE until puffed and golden (20-25 minutes)
My Thoughts
1. These were quick to whip up and absolutely delicious!
2. The original recipe suggests using pizza sauce as a dipping sauce. I preferred them without the sauce, but the hubby preferred them with.
3. These would be killer party food--either as appetizers or a main dish that is mobile. We ate them for dinner with a side salad. : )
