Blueberry Cobbler


Blueberry Cobbler


Did you know that blueberries are one of the so called "superfoods"? So that means that this cobbler is totally a healthy breakfast. Which is good, because I may have eaten it for breakfast. And snack. And dessert. See how much restraint I showed? Lunch and dinner were other things entirely.

Makes one 8" x 8" pan

Ingredients
Filling:
2 1/2 cups blueberries
1 tsp vanilla extract
1 tbsp lemon juice
1 cup white sugar
1/2 tsp all-purpose flour
1 tbsp butter, melted

Topping:
1 3/4 cups flour
4 tsp baking powder
6 tbsp white sugar
5 tbsp butter
1 cup milk
cinnamon and sugar blend (1:1 ratio)

Directions
PREHEAT oven to 375F
LIGHTLY GREASE an 8" square baking dish

Filling:
WASH blueberries and pat dry
MIX filling ingredients in the 8" square pan

Topping:
STIR together flour, baking powder, and sugar in a medium mixing bowl
CUT butter into ~1 tbsp pieces
ADD to dry mixture
CUT IN with pastry blender (or rub in with your fingers) until it is in small pieces and evenly distributed throughout
FORM a well in the center of the mix
POUR in milk
MIX until just moistened

SPOON topping over filling mixture, leave some small holes as vents
SPRINKLE with cinnamon and sugar blend

BAKE 20-25 min, until a knife inserted comes out clean of batter (there will be blueberry juice)

My Thoughts
1. This cobbler is good cold but simply amazing straight from the oven.

2. This will keep in the fridge for a couple of days but much beyond that it begins to lose some flavor.

3. Whipped cream. Ice cream. This cobbler plays well with others. ; )
