Chocolate Frosting


Peanut Butter Banana Cake


This recipe comes from Buns in my Oven" who swears by this as the most perfect chocolate frosting ever invented. I'm not sure I'd go quite that far, but it is tasty and uses only ingredients I regularly keep on hand.

Makes: ~2 cups

Ingredients
1 cup sugar
6 tbsp butter
6 tbsp milk
1/2 cup chocolate chips

Directions
ADD sugar, butter, and milk to a saucepan
BRING to a boil over medium heat
BOIL for exactly 60 seconds
REMOVE from heat
STIR in chocolate chips until smooth

USE immediately

My Thoughts
1. I had a very difficult time getting a smooth consistency with this, the chocolate chips just did not want to melt all the way. I opted for the slightly lumpy frosting rather than trying to reheat, but I think next time I might boil for 60 seconds and then just turn down to a very low heat until the chocolate has melted. It might make for a prettier cake.

2. I used this on the Peanut Butter Banana Cake and it was a nice complimentary flavor.

3. The frosting sets up relatively firmly so this would be a good one for goods you wish to transport.
